7 tbsp. butter, divided
7 tbsp. flour
1 c. chopped onion
2/3 c. diced carrots
2/3 c. diced celery
1 tsp. dried basil
1 tsp. dried parsley
1 tsp. chives
4 c. vegetable or chicken stock
5 c. peeled, diced potatoes
3 c. milk
1/2 c. sour cream
1/8 to 1/4 tsp. hot pepper sauce
salt, to taste
ground white pepper, to taste

Directions:
Directions:
Make a roux by melting 5 1/2 tablespoons of butter in a small saucepan. Stir in flour a little at a time until well-blended. Cook over low heat, stirring often, for 3 to 5 minutes. Remove from heat and set aside.

Melt remaining butter in a soup pot; add onions, carrots, celery, basil, parsley, and chives. Cook about 10 minutes. Add stock and potatoes and simmer until potatoes are tender, about 15 to 20 minutes. Stir in milk and return to simmer. Whisk in roux until liquid is thickened and smooth. Simmer 10 minutes, stirring occasionally. Add sour cream, hot pepper sauce, and seasoning to taste.
