1/2 lb penne pasta
2 tbsp olive oil, divided
3 cloves garlic
minced 1/2 yellow onion, chopped
1 lb chicken breasts, cut into bite-sized pieces
salt/pepper to taste
2 tbsp capers
1 14 oz can diced tomatoes with garlic and onion, undrained
1 14 oz can artichoke hearts, drained and chopped
1 jar roasted red peppers, drained and chopped
2 tbsp lemon juice
1/2 c dry white wine
1/3 lb crumbled goat cheese

Directions:
Directions:
Cook pasta according to package directions for al dente. Season chicken with salt and pepper. Heat 1 tbsp olive oil over medium/high heat. Cook chicken until no longer pink. Remove from pan and set aside. Heat 1 tbsp olive oil over medium heat and saute garlic and onions until soft. Return chicken and add tomatoes, capers, artichoke hearts, roasted red peppers, wine and lemon juice. Heat until bubbly, then reduce heat to medium/low and simmer for about 5 min, stirring occasionally. Serve over pasta, sprinkling crumbled goat cheese on top.
