1 tsp olive oil
3 oz fresh spinach linguine (dried can be substituted)
3 oz fresh plain linguine (dried can be substituted)
1 Tbs butter
1 garlic clove smashed
1 cup sliced wild mushrooms (mixture shiitake and oyster mushrooms)
2 oz shaved prosciutto cut into thin strips
1/2 cup whipping cream
1/2 cup half and half
1/2 cup frozen baby peas
Dash nutmeg
Ground white pepper
1/4 cup parmesan cheese

Directions:
Directions:
Bring large pot of salted water to a boil and add olive oil add linguine to cook until tender. Drain and keep warm.

While pasta is cooking make sauce. Melt butter in large skillet and add garlic. Add mushrooms and sauté until tender.

Add proscuitto. Stir in cream, half and half and peas and cook over low heat until reduced by a third (5-10 min)

Add nutmeg and pepper. The nutmeg makes the flavor pop so don't be stingy with your dash.

Toss with pasta and serve or serve over the pasta and toss on plate. Dress with parmesan cheese to taste.
