1 lb Butter, softened
1 cup Sugar
1 cup Rice Flour
3 cups regular Flour

Directions:

Cream butter and sugar slightly. Add rest of ingredients. Mix well, either by hand or with electric mixer.

Using a 12" x 15" cookie sheet with sides, pat mixture evenly all the way to the edges of the pan. Then, take a fork and pull the dough away slightly (about 1/4") so it's not touching sides of pan. With a fork, poke holes in dough every inch. Sprinkle with sugar.

Bake at 350º for 50 minutes or until LIGHT golden brown. Immediately cut into triangle or square pieces and remove from pan. Cool on paper towels or dishtowels on counter. Store in cool place.
