2 (3 oz.) pkgs. cream cheese, softened
2 med. cucumbers, peeled, de-seeded, blended and drained
1 sm. onion, grated (optional)
2 tbsp. mayonnaise
Salt and pepper to taste
Directions:
Directions:
Blend and drain cucumbers. Add cucumbers and onion to cream cheese with just enough cucumber juice to make a good spreading consistency. Stir in mayonnaise, add salt and pepper.

Karissa writes: It was before my first mission...I was so nervous as how I was supposed to carry all my gear on a dismounted patrol. "Hutch" took the time to help me set up my vest to best support the weight. He was just that type of guy, that would take the time to help out others. I'm better to have known him.
