1 # turnips
1# rutabagas
1 # carrots
3 shallots
1/2 c. olive oil
2T.chopped fresh rosemary
2 t. kosher salt
1 t. black pepper
8 cloves garlic

Directions:
Directions:
Preheat to 400 degrees.
Peel first 4 ingredients; cut into 1 in. pieces. (If your carrots are small enough , leave them whole.)
Toss with shallots and next 4 ingredients.
Place in a single layer in a jelly roll pan.
Bake 30 minutes, stirring half way through.
Add garlic, bake 45 minutes or until tender, stirring at 15 minute intervals.

You can prepare 4 hrs. ahead: Cool in pan 30 min. bake at 450 degrees for 10min. or until hot.
