1 Tbsp. Vegetable Oil
1 1/2 Tsp. bottled minced garlic
3/4 lb. chicken breast, cut into bite-sized pieces
1 small can chipotle peppers in adobo sauce (you only use 1 Tbsp. after placing the can of peppers in the food processor)
1 medium chopped onions
1 tsp. ground cumin
1/4 tsp. salt
2 14 oz. cans of low-sodium chicken broth
2 14.5oz cans of diced tomatoes, undrained
1/4 cup chopped fresh cilantro
1 cup crushed baked tortilla chips

Place chipotle peppers in a food processor and puree until they are a sauce and set aside - YOU WILL ONLY USE 1 TBSP OR A LITTLE MORE TO TASTE)
Place diced tomatoes in food processor and set aside
Heat oil in a large saucepan over medium-high heat. Add minced garlic, onion and chicken; saute' about 2 minutes until chicken is cooked and onions are transparent. Add 1 TBSP. CHILE SAUCE, and cumin; stir well. Add tomatoes, salt, broth, Taste to see if you want to add more chipotle sauce, careful it's hot! Bring to a boil, cover, reduce heat and simmer for about 10 minutes. Top with your choice of sour cream, shredded cheese and cilantro,
