3 cups nuts (1 peanut, 1 hazelnut 1 blanched almonds-all whole or any combination of your fave nuts)
2 Vanilla beans (split & scraped) or sub a splash of vanilla extract
1 cup sugar
1/4 cup corn syrup
1/4 cup honey
Sea salt
1 1/4 sticks butter
Pinch of Ancho chili powder
1/8 tsp cinnamon

Directions:
Preheat oven to 350º and toast nuts until golden & fragrant 
Put vanilla beans or extract into heavy saucepan 
Add sugar, corn syrup and honey
Cook over med hi heat, add a couple pinches of sea salt and butter
Stir & keep close eye on it about 10 minutes until caramel color. 
Add pinch of ancho chili powder, cinnamon and toasted nuts. If using vanilla beans fish those out.
Pour out into baking sheet lined with parchment paper - top another piece of parchment and roll with rolling pin or baking dish - press down to about 1/2" layer. Let it cool then break into pieces.
