8 medium sweet potatoes, baked and peeled
2 eggs
1 c. sugar
3/4 c. milk
3-4 c. mini marshmallows
1 stick butter
1 tsp. vanilla

Topping:
3/4 sticks of butter
1/2 c. chopped nuts, optional
1 c. packed brown sugar
2 c. crushed cornflakes or wheat germ

Directions:
Directions:
Preheat oven to 375ºF. Spray a 9x13 casserole dish with cooking spray and set aside. With a mixer, combine the sweet potatoes, eggs, sugar, milk, and vanilla. In a separate bowl, melt the butter and marshmallows together. Add to potato mixture. Pour into casserole dish.

In a small bowl, combine the melted 3/4 stick of butter and the rest of the topping ingredients. Top casserole with the mixture.

Bake for 40 minutes.

I add cinnamon to the potato mixture and mix with a hand mixer. I also use more marshmallows and double the topping.

My family request this every year at Thanksgiving and Christmas.
