Stuffed Green Peppers Recipe

1 ½ lb. hamburger
½ c. onion, chopped
1 tsp. salt
⅛ tsp. pepper
3 T. uncooked rice
1 can tomato soup
1 soup can full of water
3 c. cabbage, chopped
6 green peppers
Sliced sharp cheddar, or 1 c. of grated cheddar

Directions:

Cook ground beef and onion until lightly browned and crumbly, drain off fat. Mix in salt, pepper and rice. Cook 2-3 minutes more. Add soup and water. Mix thoroughly. Remove from heat. Place cabbage in 2 qt. casserole. Pour meat mixture over cabbage. Do not stir. Cover and bake in 350º oven for 1-1 ½ hours.

While casserole is baking, half, core, and remove seeds and membrane from peppers. Boil peppers in salted water for 10-15 minutes (or until color changes and peppers become slightly soft). Place halved peppers in baking dish. Stuff pepper halves with contents of baked casserole above. Put sliced or grated cheese on each stuffed pepper.

Bake stuffed peppers at 350º for 15 minutes.

Option: a few drops of Worcestershire sauce on each pepper before the cheese. (Or can mix 2 T. Worcestershire sauce in hamburger mixture).
Another option: put 2 cups of diced tomatoes in original hamburger mixture.
3rd option: Double original recipe yielding an extra meal of the hamburger for cabbage casserole.
