1-3/4 lb. Pork Tenderloin (chicken breast works too)
1-1/2 tsp. ground Cumin
3/4 tsp. Salt
1/4 tsp. freshly ground Black Pepper ( I use just regular pepper)
1 tsp. extra Virgin Olive Oil
1/2 cup Non-fat plain Greek Yogurt
1 cup Green Salsa (if sauce is hot, 3/4 cup will do)
4 (8 in.) Whole -Wheat Tortillas
1 cup shredded Coleslaw Mix ( That comes in bag I use broccoli salad ) & shredded cheese for topping

Heat oven to 450 degrees.
Cut pork or chicken in cube size pieces. Add the oil and 1-1/4 teaspoon of the cumin, 1/2 teaspoon of the salt, pepper and mix with the meat.
Bake meat about 15 minutes or until meat is done. If using chicken, it might need to cook little longer. Let the meat rest around 5 minutes.

In a small bowl, mix greek yogurt, remaining cumin (1/4 teaspoon ), remaining salt (1/4 teaspoon ) to the greek yogurt.

In another bowl, toss the meat with the green salsa.

Divide to make 4 tortillas. and top with coleslaw mix and cheese I can get 5 out of the recipe) The meat is great for left overs. If you let the meat sit in the salsa longer, it gives it a better taste.

I make this 1 - 2 times a month a nice and quick little dinner if you want something fast and not to fattening. You might need a side dish if you have a big eater. Sometimes I eat carrots with them.
