"The tradition of Italian cooking is that of the matriarch. This is the cooking of grandma. She didn't waste time thinking too much about the celery. She got the best celery she could and then she dealt with it."--Mario Batali

3 lbs. ground beef
2 cups bread crumbs (8-10 slices bread ground in food processor)
2 pkg. onion soup mix

Directions:
Mix ingredients together with hands or stand mixer. Press meat mixture evenly into large flat ungreased cookie sheet with sides. Bake at 350º for 20-30 minutes. Remove from oven carefully so as not to spill grease. With large spatula, transfer meat onto another cookie sheet. Drain grease and discard, use this pan to toast buns, leaving a little of the meat juices to crisp and flavor buns. Bake buns at 350 degrees for about five minutes. Cut meat into bun size squares, add American cheese slices while still warm. Serve on toasted buns with a pickle. Tastes just like White Castles!

Personal Notes:
This is a quick way to make a bunch of hamburgers. I toast the buns in the same pan that the hamburgers baked in so they can crisp and pick up a little flavor.
