Ingredients: |
Ingredients: Crust: 2 c. graham cracker crumbs 1/2 c. sugar 1/2 c. melted butter
Fruit Filling: 4 c. rhubarb (fresh or frozen) 1 c. sugar 3 tbsp. cornstarch
Topping: 1 - 8oz. carton cool whip 1 1/2 c. mini marshmallows 1 pkg. instant vanilla pudding Milk

Directions:Crust: Mix ingredients and pat in bottom of 9X13" pan. Bake for 10 minutes at 350º and let cool.
Fruit Filling: Cook rhubarb, sugar and cornstarch until rhubarb is tender. Let cool and layer on top of crust.
Topping: Mix together cool whip and mini marshmallows and add on top of rhubarb. Mis vanilla pudding according to package instructions and put on top of marshmallow mixture. Sprinkle graham cracker crumbs on top and chill before serving! |
