4 c. sugar
1/2 c. salt
1 qt. vinegar
2 c. water
1/2 tbsp. alum (optional - see note)

Cukes - thinly sliced
Onion - thinly sliced
Celery - thinly sliced

Directions:
Directions:
For brine, boil all ingredients while packing sliced cukes, onion and celery into jars.

Pour brine over, leaving 1" room, and seal.

To seal: bring water to a boil and remove from heat. Add cans to hot water and let sit for 5-10 minutes. You will hear the lids "pop" when they seal! Any unsealed jars will keep in the fridge for up to 2 weeks.

Alum used to be used regularly in canning to help the vegetables stay crisp. Today it is often left out, as fresh ingredients should stay crisp on their own.
