1 cup granulated Sugar
1 cup Milk
½ cup freshly squeezed Lemon Juice
3 Egg Yolks
¼ cup Cornstarch
1 cup Sour Cream
1 9” Prebaked Pie Crust (I use a graham cracker Crust)
1 tub of Cool Whip (Thawed of course)

Directions:

Combine the granulated sugar, milk, lemon juice, egg yolks and cornstarch in a glass bowl. Cook in the microwave oven on high for 3 minutes. Stir, then cook 3 more minutes or until thickened. (Usually 2 times at 3 minutes is enough, but sometimes it takes a third time at 3 minutes) When thickened, stir in sour cream. Cool the mixture, then pour it into the crust. Refrigerate until set …. When cold, top with the Cool Whip and sprinkle a bit of graham cracker crumbs for garnish
