1 bag frozen artichoke hearts thawed and chopped (available at Trader Joes) but could use jarred artichokes equivalent to 1 1/2 cups
3 c chopped kale or other greens like spinach, or swiss chard
1 clove garlic minced
1/8 t cayenne pepper
1 t salt
1 t pepper
1 c sour cream (or 1/2 sour cream and 1/2 greek plain yogurt)
3 T mayo
1/4 c Parmesan cheese (more to sprinkle on top)

Set oven to 375º Combine ingredients in bowl and mix thoroughly. Place in greased casserole dish (I used slightly smaller than 13x9). Sprinkle top with more Parmesan cheese and bake 30-40 min covered. Uncover and bake another 5-10 minutes till top is golden. Serve with pita chips or tortilla chips.

We made this for super bowl and it was good. I got the original recipe from foodbabe.com and she recommends using all organic ingredients which I do too. You can use spinach or other if you don't like kale but you really cant taste it much in this recipe. Also don't skip the mayo, it adds something to the recipe. Enjoy!
