2 large cucumbers
1 large green pepper
1/2 large onion
2-3 firm, ripe tomatoes

Vinaigrette Dressing:
1/2 cup brown sugar
1/2 cup vinegar
1/2 cup water
1 tsp salt
1/2 tsp pepper
1/8 tsp thyme

Cut veggies. Mix dressing and pour over the top. Chill at least one hour before serving.

This is a great summer side dish. It’s refreshing and light and easy. Miner’s wives used to make it for their husbands so they could have something refreshing to eat in the dark, dusty mines. It’s called “Chomp” because that’s the sound you make when you eat it.
