Fish:
2 tbsp. all-purpose flour
pinch each of salt and pepper
4 Mahi Mahi fillets 3 oz. each
1 tbsp. extra virgin olive oil

Papapya Mint Relish:
1 1/2 cups peeled papaya (1 large)
1/3 cup finely chopped green onions or shallots
3 tbsp. finely chopped fresh mint
2 tbsp. lime juice
pinch each of granulated white sugar, salt and pepper

Papaya Mint Relish:
In a small bowl mix all of the relish ingredients and set aside.
Fish:
Mix together flour, salt, and pepper. Dip fish in flour to coat both sides. In a nonstick frying pan heat oil over medium high heat. Cook fish for 1 1/2 to 3 minutes per side or until it flakes easily with a fork. Serve topped with relish.

Can use sea bass, halibut, sole, or any other fine white fish if Mahi Mahi not available
If papaya are not in season use fresh pineapple or mango for the relish. Linda says that in Barbados Mahi Mahi are called Dolphin (a fish not Flipper)
