2 boxes (8.5 oz each) corn muffin mix
2 eggs
1/2 cup milk
2 small sweet apples (such as McIntosh, Empire or Jonagold), peeled, cored, grated
3 Tbsp sugar
1 tsp pumpkin pie spice
1/2 cup chopped pecans

Heat oven to 400ºF. Coat the cups of a jumbo muffin pan with nonstick cooking spray.

In a large bowl, combine muffin mixes, eggs, milk, grated apple, 2 Tbsp of the sugar and the pumpkin pie spice. Stir until moistened, then divide evenly between prepared muffin cups, a heaping 1/2 cup batter in each. Sprinkle tops of muffins with remaining Tbsp sugar and the chopped nuts.

Bake at 400ºF for 18 to 20 minutes until lightly browned around edges. Slide a thin knife between muffin and pan; gently lift muffins from pan. Cool and serve.

Makes 6 jumbo muffins. Prep: 10 minutes. Bake: 18 - 20 minutes.

Note: To make standard-size muffins, coat 12 cups of a muffin pan with nonstick cooking spray. Divide batter among prepared cups, about 1/3 cup batter in each. Sprinkle with sugar and nuts; bake at 400 degrees for 18 minutes.
