1 C uncooked quinoa
1 t cinnamon
2 C almond milk
1 large apple, diced
1/4 C coconut
3 T^ dried cranberries
1/4 C walnuts or almonds
2 T ground flaxseed or chia seed
1 T maple syrup

Directions:
Directions:
Cook quinoa, milk, cinnamon to boiling. Reduce heat and cover on simmer for 15 minutes or until most of milk is absorbed.
Stir in apple, coconut and walnuts. Let sit covered for 10 minutes. Drizzle with maple syrup.
