2 ripe avocados
1 boiled egg
1/8 tsp salt and pepper (may need more)
2 Tbsp chopped fresh cilantro
1/2 roma tomato diced (seeds removed)
1/2 fresh squeezed lime

Directions:
Directions:
Dice avocado (easiest is to score in skin and spoon out).
Dice egg, cilantro and tomato.
Add the above to a bowl and gently fold then fold in salt, pepper and lime juice to taste.

Best if the avocado is left diced rather than mashed.
Do not make too far in advance as guacamole will turn brown, to help keep the colour a little longer rest one of the large pits in the center of guacamole until ready to serve.
