As we all know one of Daddy's favorites was canning tomatoes- first step is to clean your jars and have jars filled with hot water and lids and tops sitting in hot water.

Heat water in pot,medium heat,not boiling,turn down if too high,but keep water hot, place washed tomatoes in hot water, wait until the skins are starting to peel off, remove from heat, peel skin off tomato, and core the middle out, then drop the peeled tomato into a big pot. Once you have all the tomatoes peeled, cook the tomatoes on medium heat, stirring. Add a couple of tablespoons of canning salt. Once tomatoes are cooked and boiling, make sure your jars are hot and ready, place hot tomatoes in jars and seal.
