1 or 1/2 cup sugar

Prepare syrup to use,either lite or heavy, to do so, place the amount of sugar
you want, either 1 cup or 1/2 cup or none can use.
In a quart saucepan add water, heat sugar and water just enough to dissolve the sugar. Have this mixture ready to put in the peach filled jars.

For the peaches, place a pot of water on stove,heat water, place a few peaches at a time in the hot water (not boiling), once peach looks ready to peel (few minutes), remove from water and peel skin off peach, slice peeled peach into halves or quarters, place pieces in canning jars, fill them up, lightly pack peaches down in jar. Once a jar is filled of the peach sections add syrup mixture, fill to about an inch from the top.

Once you have the peaches ready to go in jars, place jars in a cannier and fill the cannier with water, only a few inches above the tops of the jars. Once water is boiling in cannier, continue cooking for about 20 minutes. Remove jars from cannier, cool.

To can pears, instead of placing pears in hot water to peel, peel by hand, cut peeled pears into sections, place pear sections into jars, fill with syrup. Continue the same as peaches.
