3 to 4 boneless chicken breasts
1 cup sour cream
1 can cream of chicken soup
1 cup small frozen green peas
1/2 cup carrots, diced
Salt and pepper to taste
2 rolls of Ritz crackers, crushed
Butter

Directions:
Directions:
Preheat oven to 350º. Cook chicken until tender. Drain well and chop up chicken. Add the sour cream, soup, salt and pepper. Mix well. Cook the peas and carrots approx. 2-3 minutes, drain and add to the chicken mixture. Finely crush the crackers and mix with butter until of crumbly consistency. Pat ½ of the mixture in bottom of casserole dish and add chicken mixture, and top with remaining mixture. Bake 35-40 minutes.
