3 sticks butter
1 lb. brown sugar
1/2 cup sorghum molasses
2 eggs
4 1/2 cups flour
4 tsp. baking soda, scant
1/2 tsp. salt
1 tsp. clover
2 tsp. cinnamon
2 tsp. ginger

Directions:

Mix all ingredients. Dip in sugar. Bake at 375º for 8 to 10 minutes.

Years ago, at Christmas time, Mom would buy thin ginger snaps and peach melba cream cheese and Dad would consume most of them. Over the last few years Mom began making these thin, extra crisp cookies and served them with strawberry or peach cream cheese and we all discovered that we loved them!
