1 whole head of garlic
Extra Virgin Olive Oil (EVOO)
Salt & Pepper to taste
1/2 recipe of Homemade Mayonnaise (in homemade convenience foods section) or 1 cup store bought mayo

Directions:
Directions:
Preheat oven to 400°
Cut off end of garlic bulb (expose all cloves)
Put on a piece of foil and drizzle with EVOO and S&P
Wrap garlic in foil and roast 45-50 minutes
Let cool then squish the cloves out of the skins

To make the aioli:
Stir the roasted garlic cloves into the mayo and chill until ready to use
