1 3/4 c. flour
2 tsp. baking powder
1/2 tsp. salt
1/4 tsp. baking soda
1/3 c. fat
2/3 c. sugar
2 eggs
1 c. mashed bananas
pecans, optional

Directions:
Directions:
Sift flour, baking powder, salt and baking soda together and set aside. Put fat and sugar in a mixing bowl and cream together. Add eggs one at a time. Add 1/4 of the flour mixture alternating with bananas and beat well. Stir in pecans. Put in a greased loaf pan and bake at 350º for about 60 minutes.
