beets
2 c. sugar
1 Tbsp. salt
1 c. vinegar
1 c. beet juice

Directions:
Directions:
Cover beets with water and cook until tender. Let cool until you can handle them. Reserve the water. Slip skins off of them. Cut into cubes. Make syrup with sugar, salt, vinegar, and beet juice; heat until sugar is dissolved. Add beets to syrup and bring to a boil. You might need to add more beet juice. You will need enough to cover beets after they are put in jars. Put beets in jar and cover with syrup. Process to seal jars.
