6 plum tomatoes diced small
2 medium onions diced small
3 small green pepper
3-5 carrots diced small
1/2lb strings chopped in small pieces
additional vegetables can be added if desired i.e. broccoli, cauliflower, asparagus,etc. Remember to dice small
Salt, Pepper
Nutmeg (optional)
3 cloves diced fresh garlic
potatoes or Negra yams
palm oil, vegetable. canola,or olive oil enough to cover the bottom surface of the pot

Take 1quart pot,cover bottom of the pot with palm oil (I don't know how it will taste but if you choice not to use palm oil or if it not available, use olive oil, canola oil or vegetable oil.)
heat briefly
Add the ingredients.Season with salt, pepper to taste. After stirring these seasonings into the vegetables add a pinch of nutmeg and the garlic to the ingredients, again stirring until it is mixed into the ingredients.
Saute the vegetables until they are cooked but firm in texture. The tomatoes produce liquid when cooked slowly over a low fire. If you see there is not enough liquid add a half of cup of water. Turn heat down and let simmer for another 10 minutes. Stir the vegetables so that it does not stick. Serve with yams or potatoes©
