2-3 lb of chicken breast
2 c fresh or frozen corn
2 c black beans
4 c diced tomatoes
1 packet McCormick’s Fiesta Chicken seasoning
Directions:
Directions:
Combine all ingredients in Crock Pot. Cook on low for 8 hours. Shred chicken and stir all ingredients.

Options for garnish: shredded cheese, guacamole, sour cream, tortilla chips

Serve with a side salad.

This recipe is for Wonder Men and Women everywhere who try to do it all and realize it’s just not possible. The recipe name is inspired by my fabulous children who walk through the door with me in the evening, and knowing I have been at work all day, immediately say, “what’s for dinner?” My response: “Let’s see what the dinner fairy has been doing all day. I bet she’s made something fantastic!” The beautiful thing about this recipe is the aroma that greets you upon arrival. It gives the impression that there is indeed a dinner fairy lurking somewhere in your home.
