2 Tbsp butter
1 pound mushrooms, sliced
1 onion, sliced
2 cloves garlic, chopped
1 Tbsp fresh thyme (I use extra)
1 splash white wine or broth
6 c salad greens
¼ c balsamic vinaigrette
¼ c sun dried tomatoes, sliced (optional, I don't use)
¼ c pine nuts, toasted
½ c goat cheese

Directions:
Directions:
Melt the butter. Add mushrooms and saute about 15 minutes. Add onion and saute until tender ~ about 7 minutes. Add garlic and thyme and saute until fragrant, about 1 minute. Add wine, de-glaze the pan, and cook the excess moisture off.

Assemble salad and dress with vinaigrette.
