5 lbs Rhubarb (cut small)
1 gal Water
4 lbs Sugar
juice and rind of 1 Lemon

Directions:
Directions:
To every 5 lbs of rhubarb, cut small, add 1 gallon of water which has been boiled and cooled.
Let stand in a crock for 9 days stirring often. Keep covered with cheese cloth.
Strain after 9 days, adding 4 lbs sugar to every gallon of liquid. Add juice and rind of lemon.
Let ferment for for 10 days. Bottle, but just cover with gauze for a few weeks. Ready to drink in 2-3 months.
