2 lbs.sweet potatoes, peeled and sliced
1/2 C butter
2 large eggs
1 C sugar
1/2 C sweetened condensed milk
1/2 C evaporated milk
1 tsp. ground nutmeg
1 tsp. vanilla extract
1 tsp lemon extract
1 12 ounce package frozen deep dish piecrust, thawed

Directions:
Directions:
Cook sweet potato in boiling water 30 minutes or until tender. Drain and process through a food mill for consintant texture.

Beat sweet potato and butter at medium speed in an electric mixer until smooth.

Add eggs and next 6 ingredients, beating well. Pour mixture evenly into each piecrust.

Bake at 350º on lower oven rack for 45 to 50 minutes or until set.

It will be easy to forget about pumpkin pie when you've had this sweet potato pie.

If you want a garnish, whipped topping is always good. One can consider a crumbled mixture of pecans, brown sugar and butter.
