Pumpkin Mixture:
3 eggs
1 c. sugar
2/3 c. pumpkin
1 tsp. lemon juice
Beat eggs at high speed for 5 minutes. Beat in sugar. Stir in pumpkin and lemon juice.

6 Cake Ingredients:
3/4 c. flour
1 tsp. baking powder
1/2 t. cinnamon
1/4 tsp. ginger
1/4 tsp. nutmeg
1/2 tsp. salt

Filling:
1 c. powdered sugar
2- 3 oz. pkgs. cream cheese
4 Tbsp. melted margarine
1/2 tsp. vanilla

Directions:
Directions:
Stir together 6 cake ingredients. Fold into pumpkin mixture. Spread into greased and floured jelly roll pan. Top with 1 cup nuts. Bake at 375º for 15-20 minutes. When done, turn out on towel sprinkled with powdered sugar--starting at the narrow end of the cake. Roll towel and cake together. Cool and unroll.

Combine all ingredients for the filling; beat until smooth. Spread over cooled cake and roll up. Chill until ready to serve.
