CRUST

1 3/4 C graham cracker crumbs
1 tsp. cinnamon
1/2 C melted butter

FILLING

3 eggs well beaten
10 oz. cream cheese at room tempature
1/4 tsp. salt
2 tsp vanilla extract
1/4 tsp. almond extract
3 c sour cream

Directions:
Directions:
Combine all ingredients for the crust in a mixing bowl. Mix well and press into a spring form cheese cane pan. Let the crust cover the bottom and about an inch up the sides. Let set at room tempature for 1 hour.

For the filling, mix eggs, soften cream cheese, sugar, salt, vanilla and almond extract. Beat until smooth, then blend in the sour cream. When blended well, pour the mix into the crust. Bake for 35 minutes at 375º or until the mixture is set.

When done turn off the heat to the oven and LET THE CHEESE CAKE SET IN THE OVEN FOR ABOUT 1 HOUR WITH THE OVEN DOOR CRACKED OPEN.

Leave the cake in the spring form pan until you are readty to serve. Cool thoroughly over night before serving.

My brother-in-law is New Jersy Italian. They love their cheese cake. Italian cheese cake is not usually covered with any toppings. Just enjoy the flavor with freah strawberries or raspberries to the side. As well some rich dark coffee is wonderful.
