1/4 cup butter, softened
1 cup white sugar
1 egg
3 ripe bananas
2 cups all purpose flour
1 tsp baking soda
1/2 tsp salt
1/2 bag butterscotch chips
Directions:
Directions:
1. Preheat oven to 350. Line muffin tins with paper liners.
2. In large bowl cream together butter and sugar. Beat in the egg and mashed bananas. Mix in flour, baking soda and salt until combined. Fold in butterscotch chips. Pour into muffin pan.
3. Bake in preheated oven for 1 hr. If top begins to brown too quickly decrease heat.
