2 tsp. baking soda
1 tsp. cinnamon
1 tsp. ginger
1/2 tsp. nutmeg
1/4 tsp. salt
1 egg
3/4 c. vegetable oil
1/4 c. light molasses
1 c. packed brown sugar
2 c. all purpose flour

Directions:
Directions:
Stir first 5 dry ingredients with fork. Beat in egg with fork. Beat in oil and molasses. Using wooden spoon, beat in brown sugar. Stir in flour mixture gradually until well mixed. Lightly oil 2 baking sheets. Pinch off about a tbsp. of dough. Dip one side in granulated sugar. Place sugar side up on baking sheet, placing balls about 2" apart. Fill two sheets.

Place oven racks in top 1/3 and bottom 1/3 of oven. Bake cookies on two racks, switching pans half way through baking. Continue baking until cookies crack and set around edges. Remove from oven. Let cool on cookie sheets.
