1 1/2 c. chopped dates
1 c. water
1 tbsp. lemon juice

Cookie:
1 c. butter
2 c. brown sugar
1/2 c. granulated sugar
3 eggs
4 1/2 c. all purpose flour
1 tsp. salt
1 tsp. baking soda
1 tsp. cinnamon

Directions:
Directions:
Compine chopped dates, water and lemon juice. Cook until thick and cool.

Cream butter, add sugar. Add eggs one at a time, beating well. Combine dry ingredients. Add gradually to butter mixture. Divide dough and roll on a lightly floured surface to a rectangle 1/4" thick. Spread with 1/2 date filling and roll up like a jelly roll. Wrap in wax paper or plastic wrap. Repeat with remaining dough and filling. Chill rolls overnight. Slice rolls 1/3" thick. Bake on greased sheets at 375ºF for 12 minutes.
