Peel a green plantain. Slice the plantain in very thin slices. Fry in oil until golden. Transfer the golden chips to a plate with paper towels and salt to taste.

This easy recipe is great fun to do with children. Called chifle in Ecuador, mariquitas in Cuba and plátanos fritos in Colombia, fried plantains are a staple whatever the name in every Latin American, tropical civilization.

I have fond memories of not only cooking these tasty crowd-pleasers with my Colombian grandmother and mother, but also passing on the tradition and culture to my students over the years.
