2cups Plain Flour
1cup chopped Peel
1tsp Ground Cinnamon
1/3cup chopped Blanched Almonds
1/2tsp Nutmeg
1/2tsp Allspice
2cups soft Brown Sugar
1tsp Salt
1cup soft Margarine
1cup fresh Breadcrumbs
4 Eggs
2 3/4cups Raisins
1cup Milk
2cups Sultanas
2cups Currants
1/2cup Brandy (or more!!)

Directions:
Directions:
Sift flour, spices and salt into a large mixing bowl.
Add dry ingredients and margarine and stir well.
Beat eggs and add to mixture.
Stir in milk and brandy.
Grease molds or pudding basins with melted butter.
Line with baking paper, allowing for a pleat from side to side which will unfold as the mixture expands. Cut pieces of foil to similar size as baking paper.
Spoon the mixture into molds, cover with the greased baking paper and pre cut foil. Fold and tie securely with string. Trim excess paper and foil.
In a large saucepan add water to come halfway up the mold and bring to the boil. Cover pan and boil for 5 hours topping up with boiling water as needed.
Allow to cool, remove baking paper and foil and replace with pudding cloth.
Store in a cook, airy place.
Should keep well for one year.
