2 cups bean sprouts (1 lb.)
2 cups baby spinach (10 Oz.)
1 cup cooked rice (optional)
3 green chopped onions
3 stalks celery chopped
1 diced bell pepper
½ cup raisins (optional)
3 sprigs parsley
½ cup cashews
Sesame seeds to taste

DRESSING
3 tbsp soy sauce
6 tbsp of vegetable oil or olive oil
1 clove garlic crushed
1 tbsp lemon juice

Directions:
Directions:
In a bowl, combine vegetables, rice, raisins (optional) and parsley.
Just before serving, add the cashew nuts, sprinkle with sesame seeds.

Make the dressing a few hours ahead.
In a small bowl, combine dressing ingredients.
Add to salad 30 to 45 minutes before serving.

Variations
Replace raisins with seasonal fruit (strawberries, grapes, mango, apple, etc ...)
Replace the cashews with sunflower seeds.
