3/4 cp Vegetable Oil
3/4 cp Buttermilk
2 cps. Sugar
2 tsp Vanilla Extract
2 cps. All Purpose Flour
2 tsp Ground Cinnamon
2 tsp Baking Soda
1/2 tsp Salt
1 Can (8 oz) Crushed Pineapple, Undrained
2 cps Grated Carrots
1 cp Raisins
1 cp Chopped Nuts
1 cp Flaked Coconut

Cream Cheese Frosting

1/2 cp Butter or Margarine, Softened
1 pkg (8 oz) Cream Cheese, Softened
1 tsp Vanilla Extract
16 oz Confectioners Sugar
2 T Heavy Cream

In a mixing bowl, combine eggs, oil, buttermilk, sugar, and vanilla; Mix well. Combine flour, cinnamon, baking soda and salt; Stir into egg mixture. Stir in pineapple, carrots, raisins, nuts and coconut. Pour into a greased and floured 13 X 9 X 2 baking pan. Bake at 350º for 50-55 minutes or until cake tests done. Do not overbake. Remove to a wire rack to cool. In another mixing bowl, combine all frosting ingredients; beat until creamy. Spread on cooled cake.
