1 (16 oz.) can pumpkin
2 c. sugar
1 c. vegetable oil
4 eggs, lightly beaten
2 c. all purpose flour
2 tsp. baking soda
1 tsp. cinnamon
1/2 tsp. salt

FROSTING
3 oz. cream cheese, softened
5 Tbsp. butter or margarine, softened
1 tsp. vanilla
1 3/4 c. powdered sugar
3-4 tsp. milk
chopped nuts

Directions:

In a mixing bowl, beat pumpkin, sugar and oil. Add eggs; mix well. Combine dry ingredients. Add to pumpkin mixture and beat until well blended. Pour into a greased 15x10 baking pan. Bake at 350º for 25-30 minutes. Cool. Beat cream cheese, butter and vanilla until smooth. Gradually add sugar, mix well. Add milk until frosting is desired consistency. Frost cake and sprinkle with nuts.

My birthday is the day before Halloween and I always wanted my mom to make me a pumpkin cake. I always try to make one or two during the fall season. It is a great cake to take to potluck dinners.
