CRUST
6 oz. cream cheese
2 sticks margarine or butter
2 c. flour
1/2 tsp. lemon juice

FILLING
2 eggs
1 1/2 c. brown sugar
1/2 tsp. salt
1 tsp. vanilla
1 c. chopped pecans

Directions:
Directions:
Mix ingredients for crust and chill. In another bowl, mix together the eggs, brown sugar, butter, vanilla, and salt. Stir in the pecans. Roll crust into small balls, and press into the bottoms and sides of mini muffin pans. Use a spoon to fill each of the crusts 2/3 full with the filling mixture. Bake at 350º for 18-20 minutes.

My mom, (Marilyn Spruell) makes these every year at Christmas. She bakes all kind of cookies and has taken them to the City of Mt Carmel workers, post office, trash men, and neighbors. She is one of the most thoughtful and unselfish people I know.
