4 egg whites
1 c. sugar
pinch of salt
1 lb. butter, cut in chunks
1 tsp. vanilla
1 tsp. coconut extract
1/4 c. cream of coconut

Directions:
Directions:
Over double boiler, whisk egg whites, sugar, and salt until thick, 5 minutes. Remove from heat and continue to mix 7-8 minutes, will get frothy. Beat in butter. Beat in vanilla, coconut extract, and cream of coconut. Use to frost Coconut cake.
