2 1/2 c. cake flour
1 c. sugar
1Tbsp. baking powder
3/4 tsp. salt
5 egg whites
1 whole egg
1 tsp. vanilla
1 tsp. coconut extract
3/4 c. cream of coconut
1/4 c. water
12 Tbsp. butter, softened
2 c. coconut

Directions:
Directions:
Toast coconut at 325º for 10 minutes, stirring occasionally, set aside. Mix cake flour, sugar, baking powder and salt. Cut in butter. Set aside. Beat together egg whites, whole egg, vanilla, coconut extract, cream of coconut and water. Add half of liquid to dry ingredients, beat. Add remaining liquid, beat. Bake in round cake pans at 325º for 30 minutes. Layer and frost with Swiss Butter Frosting. Press toasted coconut on top and edges. Cut in small pieces, it is very rich!
