4 Tbsp. butter
1/2 c. onion chopped
4 oz. sliced mushrooms
1 oz. package Italian seasoning mix
6 oz. tomato paste + 3/4 c. water (I have used tomato sauce instead)
2 1/2 lb. zucchini, cubed
1 c. mozzarella cheese
2 Tbsp. Parmesan cheese

Directions:
Directions:
Saute onion in butter over medium heat. Stir in mushrooms, seasoning mix, and salt if needed. Remove from heat and add tomato paste and water, stir until paste is dissolved. Stir in zucchini and pour in baking dish. Top with mozzarella and Parmesan. Bake 35-40 minutes until zucchini is tender.
