1/2 c. lightly toasted pine nuts or slivered almonds
1/2 large bunch of spinach, torn into bite-size pieces
1/2 medium head cauliflower broken into flowerets, then cut into 1/4 in. slices
1 large avocado
lemon juice

Dressing:
4 T. olive oil
3 T. white or red wine vinegar
1 large garlic clove, pressed
1/2 tsp. each; salt, dry mustard, dried basil
1/4 tsp. pepper
dash of ground nutmeg

Mix spinach and cauliflower in a bowl, toss with dressing. Dip avocado in lemon juice and garnish.

I love the dressing on this salad. I use it all the time on all sorts of salads, it is light and the flavors go with everything. This is a fun salad individually plated, with the nuts and avocado on top.
