1 c. diced bacon
4 tbsp. reserved bacon grease
1 c. sliced celery
1 c. chopped onions
3 tsp. salt
3 tbsp. flour
2/3 c. sugar
2/3 c. vinegar
1/2 tsp. pepper
1 1/3 c. water
8 c. sliced, cooked potatoes

Fry bacon; drain. Return 4 tablespoons of bacon grease to the skillet. Add celery, onions, salt, and flour. Cook gently. Add sugar, vinegar, pepper, and water. Bring to a boil. Combine potatoes and bacon. Pour celery and onion mixture over potatoes and bacon and gently combine. Pour into 3 quart baking dish. Cover and bake at 350º for about 30 minutes.
