12 whole new potatoes
3 T. olive oil (or more)
salt and pepper to taste
herbs of choice to taste
Parmesan cheese (optional)

Directions:
Boil potatoes until fork tender. On a baking sheet, generously drizzle with olive oil. Place tender potatoes on the sheet leaving plenty of room between each potato. With a potato masher, gently press down each potato until it slightly mashes, until about a 1/4 to 1/2 inch thick. Brush the tops of each potato generously with more olive oil. Sprinkle with salt, pepper and herbs. Bake at 450º until golden brown, about 20-25 minutes.

This is a fun way to serve potatoes. You can use this recipe as an appetizer or a side dish. We would love the to dig the new baby potatoes in the garden and then we would see what fresh herbs we had growing. We like lots of oil to get the potatoes crisp!
